Hillbilly Trash Breakfast
INGREDIENTS:
1 bag shredded hash brown
6 eggs
1 lb sausage or ham, cooked
1 medium onion, chopped
2 cups shredded sharp cheese
seasoning salt and pepper
red, yellow, or green peppers, optional
PREPARATION:
Take an aluminum foil cooking bag sprayed with pam, sprinkle with seasoning salt and put some pats of butter in the foil bag. Open a bag of hash browns, beat eggs, chop onions, pour all ingedients into the bag of hash browns, and mix by squeezing. Then pour the mixture into the foil cooking bag and spread out. Add some salt and pepper, more seasoning salt, and a bit more butter on top of the hash brown mixture. Place the aluminum cooking bag on a preheated grill (medium heat) and turn the bag every five minutes. The bag will start to puff and you can open it to check for doneness.

Preparation time: 30 minutes
Butter Way Rolls
Here are some of the best.
1-1/2 cup warm water
2 pkg dry yeast
4 cups flour
1/4 cup Sugar
1-1/2 tsp salt
1/3 cup shortening
1 egg
Pour warm water in hot a mixing bowl and add yeast. Stir until dissolved. Add half the flour, all the sugar, salt, shortening & egg. Start mixer on medium speed and beat until smooth - about 2 minutes. Add rest of flour and stir in by hand and beat 2 minutes. Cover with damp towel and let rise about 30 minutes. Grease muffin tins - use Pam. Stir down batter in 20 to 25 strokes. Spoon into pans filling hafl full. Let rise in warm place until batter reaches top of pan. About 20 to 30 minutes. Bake at 375 degrees for 10 - 15 minutes.
Yield: 24 rolls

EXCELLENT BEEF BRISKET
1 -10-12 LB BRISKET (Packer Trimmed)
EQUAL PORTIONS OF GARLIC POWDER, PAPRIKA AND BLACK PEPPER
1 -6 OZ WOODY'S COOKING SAUCE
1 CAN OPTIONAL OF COKE
MIX EQUAL AMOUNTS OF GARLIC POWDER, PAPRIKA, AND BLACK PEPPER IN A BOWL TO GIVE AMPLE AMOUNT TO RUB ENTIRE BRISKET WITH THE MIXTURE. BE SURE TO KEEP THIS IN APPROXIMATE EQUAL QUANTITIES OF EACH. COMPLETELY RUB THE MIXTURE ON THE BRISKET AND REFRIGERATE OVERNIGHT BEFORE COOK .
PUT BRISKET ON SMOKER, PREFERABLY WATER TYPE, WITH MESQUITE OR HICKORY WOOD CHIPS FOR SMOKING PURPOSES. TEMPERATURE OF SMOKER SHOULD BE APPROXIMATELY 200 DEGREES.
SMOKE FOR ABOUT ONE AND ONE-HALF TO TWO HOURS WITH OUT WRAPPING TOTALLY. THIS ALLOWS THE SMOKE FLAVOR TO TOTALLY PENETRATE THE MEAT.
THEN WRAP IN HEAVY DUTY FOIL AND POUR WOODY'S COOKING SAUCE OVER THE BRISKET. COOK FOR AN ADDITIONAL 7 TO 8 HOURS. (A CAN OF COKE CAN BE, SUBSTITUTED FOR THE WOODY'S SAUCE IF DESIRED.)
TAKE BRISKET OFF OF HEAT AND ALLOW TO COOL 3 TO 4 HOURS BEFORE SLICING. THEN TRIM AWAY ALL FAT AND SLICE ACROSS GRAIN OF MEAT. YOU CAN REFRIGERATE BEFORE SLICING FOR A PERIOD OF TIME (SUCH AS OVERNIGHT) THIS MAKES IT MUCH EASIER TO SLICE AND REMOVE ALL FATTY AREAS.
TO HEAT UP FOR SERVING PUT IN METAL SERVING PAN IN THIN SLICES. THEN PUT PAN WITH MEAT IN OVEN AT ABOUT 375 DEGREES FOR ABOUT ONE HOUR, OR UNTIL HEATED THROUGHOUT. SPRINKLE A LITTLE WATER OVER THE MEAT SO AS TO NOT DRY IT OUT.
THIS RECIPE WORKS WELL FOR FREEZING FOR FUTURE USE.
AFTER CHILLING OVERNIGHT, PUT IN METAL SERVING PAN IN THIN SLICES.

Southerner In Iraq sees Wal-Mart Illusion
After a long day searching houses in suffocating Iraqi heat, Lance Corporal Mike Wilson of Princeton, Kentucky recalls seeing relief in the distance.
Wilson said that looking through the haze he thought he saw a Wal-Mart and was ready to get some cold water for his men when he discovered it was an illusion.
I'm surprised Wal-Mart didn't try to bill him for the imaginary water.

Hillbilly Punch
Original recipe yield: 1 serving.
Prep Time: 2 Minutes
Ready In: 2 Minutes

INGREDIENTS:
4 cups ice cubes
1 fluid ounce white rum
1 fluid ounce peach schnapps
1 fluid ounce amaretto liqueur
1 1/2 cups cranberry juice cocktail, chilled
1 cup lemon-lime flavored carbonated beverage, chilled
DIRECTIONS:
Fill a (1 quart) canning jar with ice. Measure in rum, peach schnapps and amaretto liqueur. Pour in cranberry juice until glass is 3/4 full. Fill with lemon-lime soda.

Hillbilly Chili - With Beans
Ingredients
1 pound lean ground beef
Salt and pepper, to taste
4 cans tomatoes, crushed
4 cans pinto beans
1 envelope chili seasoning
Chili powder, to taste
Jalapeepper juice, to taste
1 to 2 tablespoons vinegar
Brown ground beef in large saucepan, stirring until crumbly; drain.
Season with salt and pepper.
Add tomatoes and beans.
Cook over medium heat until bubbly.
Add chili seasoning, chili powder, and pepper juice. Simmer, covered, for 30 minutes.
Stir in vinegar to bring out the flavor of the spices just before serving.

Earl's BBQ Sauce
¾ Cup Any type Honey
2 Cups Hickory Smoke BBQ Sauce (Kraft)
¾ Cup Water
½ Cup Frozen Concentrate Orange Juice
½ TSP Lemon Juice
2 TSP Finely Chopped Garlic
4 TSP Seasoning Lemon Pepper
½ Cup Finely Chopped Onion
Cooking Instructions
Place finely chopped onions in medium sauce pan.
Sauté until tender.
Add BBQ sauce, honey, water, lemon juice, garlic, and lemon pepper while warming over low heat.
Stir in frozen orange juice.
Simmer entire mixture over low heat for about 60 minutes, stirring often.
CAUTION- BE SURE TO KEEP HEAT LOW AND STIR OFTEN TO AVOID STICKING AND SCORCHING.
Allow mixture to cool to room temperature. Put in sealed container and refrigerate. Sauce should always be mixed at least two days before needed and refrigerated for better taste.
Sauce is excellent for drizzling or dipping. Good on smoked brisket or other meats.

HILLBILLY CHILI
Cook in large pot until meat loses its red color............
3 pounds GROUND CHUCK OR ROUND or a 50-50 mix of CHILI MEAT and GROUND DEER MEAT.
ADD............................. 1 large ONION, chopped
1 Tbsp MINCED GARLIC
When onions are tender,
add............................ …1 Tbsp SALT
4 Tbsp CHILI POWDER
1 tsp GROUND OREGANO
2 tsp ground CUMIN
2 cups HOT WATER
2 10 oz cans SNAPPY TOM
I add for the Texas taste...... 3 finely chopped JALAPENO PEPPERS OR IF YOU DARE USE HABANERO PEPPERS!
Simmer, covered, at least 3 hours. Add more water if necessary.
YIELD: 8 TO 10 SERVINGS
