Hillbilly Chili - With Beans

Well, I consider my self a hillbilly or a redneck or someone who enjoys a simpler life in the backwoods and hills, however, I am really a transplanted Texan. Therefore, I don't really consider something with beans in it as true chili. I do believe if someone says they make "chili" it is with no beans. If there are beans in it it should be called what it is "Chili with beans" However, I ran on to this recipe on a site with lots of good recipes and thought I would give it space on Hillbilly-Willy site. Cause you know sometimes if we aint got enough deer in the freezer we might need to stretch the chili with a few beans.

Ingredients
1 pound lean ground beef
Salt and pepper, to taste
4 cans tomatoes, crushed
4 cans pinto beans
1 envelope chili seasoning
Chili powder, to taste
Jalapeņ¯ °epper juice, to taste
1 to 2 tablespoons vinegar

Brown ground beef in large saucepan, stirring until crumbly; drain.
Season with salt and pepper.
Add tomatoes and beans.
Cook over medium heat until bubbly.
Add chili seasoning, chili powder, and pepper juice. Simmer, covered, for 30 minutes.

Stir in vinegar to bring out the flavor of the spices just before serving.

Chili aint chili if it has some beans!

There is a big difference between a redneck and a hillbilly. Hillbillies come from the hills and mountains and pretty much are people who like to be left alone. Rednecks can come from anywhere and like to usually be loud and show off for other people.
