The quote of the month is by Jay Leno :
"With hurricanes, tornados, fires out of control, mud slides, flooding, severe thunderstorms tearing up the country from one end to another, and with the threat of bird flu and terrorist attacks,"Are we sure this is a good time to take God out of the Pledge of Allegiance?"

Crack Down on Trans Fat
Willy says - ???? Trans-Fat - are they talking about my girlfriend. - She dont want to go to New York City anyway!! 10-4 - Willy
This is an exceprt from an article taken from Slate.com
Tempting Fat
The coming crackdown on trans fats.
By William SaletanPosted Saturday, Dec. 9, 2006, at 1:31 AM ET
Put your hands in the air, and step away from the cookie.
That's the message from New York City, where the health department has just ordered the city's 25,000 restaurants to purge nearly all trans fats from their menus. Restaurant owners are terrified that other cities will follow. In the dough business, like show business, New York leads the way. If you can't bake it there, you can't bake it anywhere.
The whole world is engulfed in a war on fat. On one side are health crusaders. On the other side are food sellers and libertarians. Lately, the health costs of obesity have prodded politicians into the war, shifting the balance of power to the crusaders. Still, Americans draw the line at food. You stamped out our cigarettes, you made us wear seat belts, but you'll get our burgers when you pry them from our cold, dead hands.

Speaking Republican or Democrat
Willy says - why cant they just speak redneck. Lets jest go in there and knock out those suckers and let it be done. This will take care of all civil unrest. This way we dont have to worry if it is Civil War - Unrest or just plain out a mess. 10-4 Willy
Below is taken from Slate.com
How To Speak Republican …… or Democratic.By Jack ShaferPosted Wednesday, Dec. 6, 2006, at 7:02 PM ET
In recent weeks, major U.S. news organizations have started using the phrase "civil war" to describe the unpleasantness in Iraq, prompting a brawl between liberal and conservative commentators.
Speaking on the left, Eric Boehlert derides the press for only now calling the mayhem a civil war. Boehlert accuses various organizations, which include NBC News, the New York Times, the Miami Herald, the Christian Science Monitor, and the Los Angeles Times, of accommodating President Bush by keeping the phrase out of their coverage for three-plus years. The administration abhors the phrase, preferring "sectarian violence."

Walmart- loves Gays -
It just aint right! Cant even depend on Walmart to support the Rednecks. Do you think they would be interested in supporting a Larry the Cable family reunion. They probably wont be any gays there but it might be likely that some guy may be running around drunk looking for his sister that he married.
Think about that one for a minute - 10-4 Willy

Turtle Pizza
Willy is always looking for good food. This Paula Deen Lady is my favorite. She cooks up good old fat food that any country boy would like. Boy does this take care of a sweet tooth.
_________10-4 Willy________________________________
4 (10-inch) flour tortillas (use the largest you can find)
1 (12-ounce) package caramel candies, unwrapped
1/2 cup sweetened condensed milk
1 cup semisweet chocolate chips
1 cup toasted pecans
Preheat oven to 350 degrees F. Cut tortillas into 8 wedges, each. Bake the tortilla wedges for 8 minutes, or until a light golden brown (If you try to cut the baked tortilla, it will break and crack).
Combine caramels and condensed milk in a microwave-safe glass dish. Melt in a double boiler or microwave on high for 1 minute, stir, and microwave again for 1 minute. Stir again. When caramels are melted, stir mixture until it is smooth.
Spread it evenly on the tortilla wedges. Melt chocolate. Stir until smooth. Spread the chocolate layer over the caramel layer.
Sprinkle the nuts evenly over the chocolate.

N.J. high court opens door to gay marriage
TRENTON, N.J. - New Jersey’s highest court opened the door Wednesday to making the state the second in the nation to allow gay marriage, ruling that lawmakers must offer homosexuals either marriage or something like it, such as civil unions.
----------------------------------------------------------------------------------------
The above is the headlines and the first paragraph of a MSNBC news article.
All I can say is -What is this world coming to. We are heading so far away from this country's roots of a Christian Nation that it is amazing. In the Ozarks- out here in Hillbilly country we would talk about this type of thing and mention banjo's playing and asking if they can squeel like a pig. I think some of these lawmakers need to here the Banjos picking and see if they can't get this country back on the straight and narrow.
Maybe we need a little more Dixie Flag flying and more "SOUTHERN HOSPITALTY" to some of these yankee law makers.

This is a prayer request for a man in need of prayer.
Please, take a moment and pray for this man.
He is in a situation that few people find themselves.
He is criticized at every turn, and few people have thanked him for the good things he has done. Few people know the extent of his situation.
We need to pray that God gives him the guidance he needs to do his job effectively.
I have attached a photo of this man. Look at it. Most of you will recognize him. Please pray for him.
Feel free to pass this on to anyone else who will pray for this man. He hasn't asked me to send this request, but I am sure that he will appreciate all your prayers. If you were facing what he is facing, you'd want people praying for you!
Thanks!
No matter what party you support, this man is our President right now and needs our help in prayers.
This country belongs to all of us.
IN GOD WE TRUST

Hillbilly Trash Breakfast
camping recipe from Pat Frain. This is so easy to make, and you can add whatever you want, and clean up is easy. I made this up last summer and the marina that we keep our boat at and my other boating friends just love it. We have a cruiser which is like a camper, only it sits on the water.
INGREDIENTS:
1 bag shredded hash brown
6 eggs
1 lb sausage or ham, cooked
1 medium onion, chopped
2 cups shredded sharp cheese
seasoning salt and pepper
red, yellow, or green peppers, optional
PREPARATION:
Take an aluminum foil cooking bag sprayed with pam, sprinkle with seasoning salt and put some pats of butter in the foil bag. Open a bag of hash browns, beat eggs, chop onions, pour all ingedients into the bag of hash browns, and mix by squeezing. Then pour the mixture into the foil cooking bag and spread out. Add some salt and pepper, more seasoning salt, and a bit more butter on top of the hash brown mixture. Place the aluminum cooking bag on a preheated grill (medium heat) and turn the bag every five minutes. The bag will start to puff and you can open it to check for doneness.
Servings: 6
Preparation time: 30 minutes

EXCELLENT BEEF BRISKET
Ingredients
1 -10-12 LB BRISKET (Packer Trimmed)
EQUAL PORTIONS OF GARLIC POWDER, PAPRIKA AND BLACK PEPPER
1 -6 OZ WOODY'S COOKING SAUCE
1 CAN OPTIONAL OF COKE
MIX EQUAL AMOUNTS OF GARLIC POWDER, PAPRIKA, AND BLACK PEPPER IN A BOWL TO GIVE AMPLE AMOUNT TO RUB ENTIRE BRISKET WITH THE MIXTURE. BE SURE TO KEEP THIS IN APPROXIMATE EQUAL QUANTITIES OF EACH. COMPLETELY RUB THE MIXTURE ON THE BRISKET AND REFRIGERATE OVERNIGHT BEFORE COOK .
PUT BRISKET ON SMOKER, PREFERABLY WATER TYPE, WITH MESQUITE OR HICKORY WOOD CHIPS FOR SMOKING PURPOSES. TEMPERATURE OF SMOKER SHOULD BE APPROXIMATELY 200 DEGREES.
SMOKE FOR ABOUT ONE AND ONE-HALF TO TWO HOURS WITH OUT WRAPPING TOTALLY. THIS ALLOWS THE SMOKE FLAVOR TO TOTALLY PENETRATE THE MEAT.
THEN WRAP IN HEAVY DUTY FOIL AND POUR WOODY'S COOKING SAUCE OVER THE BRISKET. COOK FOR AN ADDITIONAL 7 TO 8 HOURS. (A CAN OF COKE CAN BE, SUBSTITUTED FOR THE WOODY'S SAUCE IF DESIRED.)
TAKE BRISKET OFF OF HEAT AND ALLOW TO COOL 3 TO 4 HOURS BEFORE SLICING. THEN TRIM AWAY ALL FAT AND SLICE ACROSS GRAIN OF MEAT. YOU CAN REFRIGERATE BEFORE SLICING FOR A PERIOD OF TIME (SUCH AS OVERNIGHT) THIS MAKES IT MUCH EASIER TO SLICE AND REMOVE ALL FATTY AREAS.
TO HEAT UP FOR SERVING PUT IN METAL SERVING PAN IN THIN SLICES. THEN PUT PAN WITH MEAT IN OVEN AT ABOUT 375 DEGREES FOR ABOUT ONE HOUR, OR UNTIL HEATED THROUGHOUT. SPRINKLE A LITTLE WATER OVER THE MEAT SO AS TO NOT DRY IT OUT.
THIS RECIPE WORKS WELL FOR FREEZING FOR FUTURE USE.
AFTER CHILLING OVERNIGHT, PUT IN METAL SERVING PAN IN THIN SLICES.
WHEN READY FOR USE THAW FOR 4 TO 5 HOURS AND THEN PUT PAN WITH MEAT IN OVEN AT ABOUT 375 DEGREES FOR ABOUT ONE AND ONE HALF HOUR. SPRINKLE A LITTLE WATER OVER THE MEAT SO AS TO NOT DRY IT OUT.
THIS BRISKET IS COMPLEMENTED BY EARL'S BBQ SAUCE.

Southerner In Iraq sees Wal-Mart Illusion
You know you're in a bad way when you start seeing imaginary Wal-Marts:
After a long day searching houses in suffocating Iraqi heat, Lance Corporal Mike Wilson of Princeton, Kentucky recalls seeing relief in the distance.
Wilson said that looking through the haze he thought he saw a Wal-Mart and was ready to get some cold water for his men when he discovered it was an illusion.
I'm surprised Wal-Mart didn't try to bill him for the imaginary water.

Illegal Aliens - Illegal is the Point Here!
Battling Corruption - Illegal Immigration
Today between eight and fourteen million illegal aliens reside in the United States, draining our nation’s economy, while presenting a security threat to the people of the United States. Public officials have not only repeatedly failed to protect our borders from this illegal alien invasion, but they have also been complicit in the effort to undermine our nation’s immigration laws.
Judicial Watch is investigating and taking legal actions to remedy the illegal immigration problem.

Hillbilly Chili - With Beans
Well, I consider my self a hillbilly or a redneck or someone who enjoys a simpler life in the backwoods and hills, however, I am really a transplanted Texan. Therefore, I don't really consider something with beans in it as true chili. I do believe if someone says they make "chili" it is with no beans. If there are beans in it it should be called what it is "Chili with beans" However, I ran on to this recipe on a site with lots of good recipes and thought I would give it space on Hillbilly-Willy site. Cause you know sometimes if we aint got enough deer in the freezer we might need to stretch the chili with a few beans.
Ingredients
1 pound lean ground beef
Salt and pepper, to taste
4 cans tomatoes, crushed
4 cans pinto beans
1 envelope chili seasoning
Chili powder, to taste
Jalapeñ¯ °epper juice, to taste
1 to 2 tablespoons vinegar
Brown ground beef in large saucepan, stirring until crumbly; drain.
Season with salt and pepper.
Add tomatoes and beans.
Cook over medium heat until bubbly.
Add chili seasoning, chili powder, and pepper juice. Simmer, covered, for 30 minutes.
Stir in vinegar to bring out the flavor of the spices just before serving.

HILLBILLY CHILI
A unique blend of meat, spices and other ingredients found to be a favorite in the foot hills of the Ozark Mountains in Northern Arkansas. This unique blend and variations of it have been discovered, along with other unique recipes, to be in the pots on stoves of Grandma's kitchens as well as in the boiling pots at Deer camps throughout Arkansas by a Texan misplaced by the job market from Texas to Arkansas.
Cook in large pot until meat loses its red color............
3 pounds GROUND CHUCK OR ROUND or a 50-50 mix of CHILI MEAT and GROUND DEER MEAT.
ADD............................. 1 large ONION, chopped
1 Tbsp MINCED GARLIC
When onions are tender,
add............................ …1 Tbsp SALT
4 Tbsp CHILI POWDER
1 tsp GROUND OREGANO
2 tsp ground CUMIN
2 cups HOT WATER
2 10 oz cans SNAPPY TOM
I add for the Texas taste...... 3 finely chopped JALAPENO PEPPERS OR IF YOU DARE USE HABANERO PEPPERS!
Simmer, covered, at least 3 hours. Add more water if necessary.
